Del Suelo Madrecuishe Mezcal is a distinctive artisanal expression crafted from the wild Madrecuishe agave (Agave Karwinskii), known for its slender, woody stalk and concentrated flavor profile. Sourced from Oaxaca, Mexico, the agave is slow-roasted in earthen pits, crushed by a stone tahona, and naturally fermented before being double-distilled in copper pot stills. This meticulous process yields a complex spirit marked by savory, earthy notes. Expect an aromatic balance of subtle minerality, damp earth, and wood smoke, leading to a palate rich with green bell pepper, white pepper spice, and a distinctive herbal, almost celery-like character. Its dry, lingering finish makes it an excellent representation of a pure, wild agave mezcal.
