Maison Marchand-Tawse was created in 2005 by the famous Quebec winemaker Pascal Marchand. Based in Nuits-Saint-Georges, this winery worked hard to become one of the rising stars of Burgundy and reach the highest quality level and a wide and complete range across both Cote de Beaune and Cote de Nuits. Pascal Marchand arrived in Burgundy from Quebec in the early 80s and immediately fell in love with it. After his studies in winemaking, his career started in 1985 with Comte Armand, at Clos des Epenots. Someone so young managing such an old Burgundian Domaine soon made a star of him, Pascal continued his work at the Domaine de la Vougerait. He contributed to create it and devote it to biodynamic farming. After a phase of consulting as a flying winemaker in the new world, Pascal opens his negociant in 2005. In 2010 he associates with his old friend Moray Tawse and together they gradually acquire 9 hectares of vineyards.

After the harvest, the team sorts through the crop vigorously, often giving up 10 percent to ensure that only the finest quality fruit reaches the fermentation tanks. The grapes are 100% de-stemmed and cold-macerated for five days. The must undergoes two daily punch-downs at the start of alcoholic fermentation then pump-overs during maceration to ensure a gentle extraction before a gentle pressing. Total vatting time: 18 days. The wine ages for 18 months in French oak barrels (20% new oak from the Allier forest with a medium toast) and undergoes one racking. The wine is then bottled unfined and unfiltered. All aging operations are carried out according to the lunar calendar.

Tasting Note:
Deeply sanguine with pure red fruit and penetrating notes of iodine and sweet tobacco, this Pommard is tightly wound at the core with a charming rusticity and supple tannins at the finish.
