This process involves halting fermentation early, leaving residual sugar and requiring roughly double the amount of grapes compared to traditional Pisco. The resulting spirit is then single-distilled to proof, ensuring purity without any aging or dilution.
This technique lends the Pisco a rich, full-bodied texture and profound complexity.
