This expression is uniquely made from fresh cane juice, using the Madame Mevs variety of sugarcane, which is fermented spontaneously using only wild yeasts. It is then distilled in a small pot still, without the addition of water before bottling, resulting in a robust, high-proof spirit that captures the raw, terroir-driven essence of Haiti.
