Derrumbes Zacatecas Mezcal is a unique and artisanal spirit crafted exclusively from the Salmiana agave, which thrives in the high-altitude, semi-arid plains of the northern state of Zacatecas. Distilled by the Master Mezcalero using a traditional process, the agaves are roasted in underground stone ovens before fermentation in stone tanks. The distillation takes place in copper pot stills, yielding a mezcal with a distinct and complex profile. Expect bright, herbaceous notes, a savory minerality from the terroir, and subtle hints of green bell pepper and dried fruit. This expression showcases the unique characteristics of the Salmiana agave and the time-honored methods of its region, offering a sophisticated and slightly floral take on mezcal.
