Herbsaint Liqueur d'Anis is a historic anise-flavored spirit, famously created in New Orleans as an American answer to absinthe after its prohibition. Made by the Sazerac company, it is recognized as a traditional pastis-style spirit, though it is often noted for being less sweet than many European counterparts. Bottled at 90 proof (45% ABV), Herbsaint is distilled with star anise, offering a complex, herbaceous profile dominated by rich licorice and subtle spice notes. When water is added, it performs the classic "louche," turning a cloudy, milky white as the essential oils emulsify. It is an essential component in the original Sazerac cocktail recipe and is perfect for sipping traditionally with water and sugar, or used as a flavorful rinse for glasses.
