Koch El Tobala Mezcal is an exceptional expression, distilled from 100% wild-harvested Tobalá agave, known for growing in the high-altitude, rocky soils of Oaxaca. This rare agave species yields a mezcal with a distinctly complex and nuanced profile.
The production adheres to ancient, traditional methods, involving roasting the agave hearts in earthen pits, crushing them with a stone tahona, and fermenting naturally before being double-distilled in copper pot stills.
