La Higuera Wheeleri Sotol is an exceptional expression of this unique spirit, meticulously crafted using traditional methods in Mexico. The process begins with the fermentation of the *Dasylirion wheeleri* desert spoon plant fibers in 1,000-liter pine vats with wild yeasts. This naturally fermented mash is then double-distilled in copper alembic stills.
The resulting sotol is celebrated for its balanced and complex profile. On the nose, it is highly herbal with a subtle hint of smoke.
