Crafted in Santiago Matatl??n, Oaxaca, this expression begins with certified organic agave Espad??n, cooked in an earthen oven and mashed by tahona. The initial distillation follows traditional methods. During a secondary distillation, the vapor passes through a 'pechuga' basket containing a raw chicken breast (a common practice to balance flavors) alongside specially selected coffee beans. This process imparts a subtle, deep roast character and complex bitterness that balances the smoky agave, alongside notes of dark chocolate, cinnamon, and warm earth. Bottled at 48% ABV, this mezcal offers a profound depth, ideal for sipping neat to appreciate its layers, or as a sophisticated base in complex cocktails.
