Rooster Rojo Joven Mezcal is a vibrant, unaged expression crafted from 100% Espadín agave in Santiago Matatlán, Oaxaca, often called the "World Capital of Mezcal." The agave hearts, or piñas, are slow-roasted in underground conical ovens with wood and volcanic rock, imparting the signature smoky flavor. They are then crushed using a traditional tahona stone wheel before being naturally fermented and twice-distilled in copper pot stills.
