Soumah of the Yarra Valley "Hexham" Chardonnay is a sophisticated Australian expression celebrated for its complexity and finesse. Hailing from the cool-climate Yarra Valley, the fruit is meticulously handpicked, whole bunch pressed, and barrel fermented using 100% wild yeast, a process that imbues the wine with depth. It is matured on lees in French oak (barriques and puncheons) for eight months, with partial malolactic fermentation adding creamy texture.
The nose is finely-grained and complex, offering aromas of preserved lemons, struck match, and fennel, alongside white peach and roasted cashew. The palate maintains a linear, fresh citrus character supported by good weight, leading to flavors of peach, vanilla, and a lingering minerality, culminating in an apple-crisp finish. This wine is excellent when paired with roast monkfish or spatchcock chicken.
